Grupo focal sobre el desarrollo de productos innovadores a base de frijol gandul (Cajanus cajan) en la Cuenca del Río Peñas Blancas de Costa Rica

The Gandul pea (Cajanus cajan) is known for its properties as nitrogen fixer in the soil, its high nutricional value and as a protector of hydric basins. Gandul’s crops are produced in Latin America, Africa,and Asia and it is being exported to the USA and Europe. It is the basis of several, mainly in the form of canned goods. There are plantations in Costa Rica, but no local studies on the bean or its sub-products. For this reason, I did a focus group looking for innovative ideas about the most feasible industrialial productos from this pea. The most important were: fresh Gandul, dry Gandul, frozen row Gandul, flans, soups, Chuncky sauces, meat sauces, dips, snacks, tortillas and flour.
